Recipe - Steamed Fillet of Red Snapper with Loveapple Sauce
- 4 x 6oz fillets of red snapper
- 6oz Busha Browne's Spicy Tomato Loveapple Sauce
- Juice of 2 limes
- 1/4 cup white wine (your preference)
- 1 tsp sea salt
- 1 tsp ground black pepper
- 3 tsp fresh garlic — minced
- 2 tsp fresh thyme leaves
- 2 tsp fresh basil leaves
- 2 med. onion sliced
- 2 med. carrots — peeled and julienned
- 1 med. red sweet pepper — julienned
- 1 med. green sweet pepper — julienned
- 3 med. tomatoes — seeded & julienned
- 1 tbs butter
- 2 tbs olive oil
Busha Browne's Tomato Love Apple Sauce liven pasta, seafood recipes or any other savoury dish.
Wash snapper fillets with lime juice, season with salt and pepper. In a saute pan, add the butter & olive oil and saute the vegetables for 5 minter to soften, add garlic and cook for 2 miuntes.
Deglaze the pan with the white wine then add Tomato Loveapple Sauce and bring to gentle simmer. Place fish fillets on top of vegetables, splash with sauce, cover tightly and let steam for 12 —15 minutes. Serve fish on bed of vegetables and sauce and sprinkle with fresh herbs.
