Recipe - Spicy Butter & Herb Roasted Cornish Hen
- 4 whole birds
- 2oz Busha Browne Jerk Seasoning
- 2 tbs butter / olive oil
- Juice of 1 lemon
- 1 tbs fresh basil
- 1 tbs fresh thyme leaves
Busha Browne's authentic jerk seasoning is specially blended for the "jerking" of meat or fish. Used prudently prior to grilling or roasting.
Wash birds with lemon juice. Combine Jerk Seasoning, butter and fresh herbs together in a bowl to form a paste, rub inside and out of each bird.
Place in pre-heated oven and roast at 375° for 1/2 hour - until done and juices run clear. Serve with a garlic mashed potato and fresh salad.
